Well, by clicking on the host, you can create a user. From there you can use that account to connect on the XMPP server. You should first try with a standard client like Psi, for example.

Then, you need to learn XMPP to get familiar with the protocol itself and the behaviour. You can read specification from the XMPP Standards Foundation.

There is also a few books available on XMPP that should help you get the basis.
