I want to test ejabberd and installed it on my macbook. I have the admin and a new user. When I now want to login with spark and use the username, password and the server path - i can´t login. What do I have to use for the server entry?

Check the ejabberd Guide, the section about 'Host names'. The Jabber server name is in the configuration file ejabberd.cfg.
If you still can't connect, maybe your client tries to use a method that isn't enabled in the server: plain, SSL, TLS...
